SHISH TAWOOK

YIELD: 4 servings        TIME: 30 mins

 

Chicken breast is the #1 lean meat consumed in the United States, and rightly so.  When purchasing chicken, however, go for organic, free range and halal if possible

 

INGREDIENTS:
1-1.5 chicken breast cut into cubes.

 

MARINADE:
3 TBSP Yogurt of your choice (plain, low-fat, greek)
6 garlic cloves
3 TBSP olive oil
Juice of 1 lime
1/2 tsp  ground cumin
1.5 tsp all spice (not the same as garam masala)
1 tsp  dried thyme
1/4 tsp oregano
1 tsp salt
1/2 tsp fresh crushed black pepper
1 TBSP tomato paste
1 tsp paprika
1/2 tsp turmeric
1/4- 1/2 cayenne pepper

 

PREPARATION:

STEP 1
Clean and cut the chicken into cubes
STEP 2
Mix all ingredients for marinade in a bowl. Add chicken and set aside. Marinate for at least 30 mins. Overnight is best.
STEP 3
Preheat your grill or grill pan
STEP 4
Skewer the chicken cubes and cook on each side for at least 3-4 mins or until done. 
STEP 5
Let cool and remove from skewers
STEP 6
Enjoy with your choice of sides and garlic sauce.

 

COOKING TIPS:
If using wooden skewers, soak for at least 20 mins to prevent them from burning.
Add onions, tomatoes, and bell peppers for a boost of color, flavor and nutrients!
